Follow the same preparation procedures for Beurre Rouge (red butter sauce) and Beurre Rose (pink butter sauce), substituting red wine or rose wine for the white.

  • 2 shallots, finely diced
  • ½ teaspoons lemon juice
  • salt and white pepper
  • 100 g butter
  • 400 ml white wine
  • 130 ml cream
  • Recipe preparation steps

    Combine the white wine, chopped shallots, and lemonlemon juice and reduce by half.

    Add the cream and reduce again by half. Add the butter, whisking constantly until the butter incorporates and the sauce thickens. Do not allow the mixture to boil (boiling will separate the sauce). Season with salt and white pepper to taste.
