  • 1 small onion, minced
  • 1 bouquet garni
  • pinch nutmeg
  • 1 teaspoon tomato paste
  • fine salt and freshly ground white pepper, to taste
  • 15 g butter
  • 8 g all-purpose flour
  • 250 ml whole milk

    Prepare a "sauce béchamel"(white sauce): Melt butter in a small saucepan over medium heat. Add the minced onion and sweat until the onions start to soften. Stir in the flour and cook for a couple of minutes. Do not allow the flour to brown. Gradually mix in the milk and bring to a low boil. When the sauce is thick and smooth, add the bouquet garni. Simmer for about 20 minutes, uncovered, to reduce slightly.

    Remove the bouquet garni and puree the sauce in a small food processor. Strain the puree and season with salt, pepper, and nutmeg. Mix in the tomatotomato paste.
