  • 1 bouquet garni
  • freshly ground pepper, to taste
  • 1 tablespoon heavy cream
  • 2 tablespoons chilled butter, diced
  • 100 g dried white beans, soaked in water overnight, drained
  • 30 g chopped onion
  • 50 g chopped leek
  • 30 g chopped carrot
  • 350 ml chicken stock

    Place the beans, vegetables, bouquet garni, and chicken stock in a saucepan and bring to a boil. Season with pepper, lower heat, cover, and simmer until the beans are tender, about 1 to 1hour 30 min.

    Transfer the contents of the saucepan to a blender and puree thoroughly. Strain the soup into a clean saucepan and reheat. Whisk in the cream. When the soup is near boiling, remove from the heat and whisk in the butter. Salt to taste.
