  • 25 g lard
  • 400 g veal shoulder, cut into cubes, 4 to 5 cm per side
  • 2 g dried bread crumbs
  • 20 g garlic cloves, peeled and de-germed
  • 120 g tomato puree, prepared from 300 peeled, seeded, diced, ground, and drained plum tomatoes
  • 25 g veal demi-glace, or 1 teaspoon dehydrated veal stock dissolved in 2 tablespoons hot water
  • coarse salt and freshly ground pepper, to taste

    Heat the lard in a saucepan over medium heat. Working in small batches, brown the meat and drain. Return all the meat to the saucepan, and add the bread crumbs, garlic, tomato puree, demi-glace, salt, and pepper. Lower heat, cover, and simmer for about an hour until tender.

    When the meat is cooked, remove the garlic, or serve with the stew.
