  • 5 new onions sliced
  • flour, 2 handful
  • 1 tablespoon olive oil
  • salt, fleur de sel from guérande, black pepper
  • 800 g belly of tuna
  • peanut oil
  • Recipe preparation steps

    Preparation of the onion rings: dust the sliced onion rings with 2 handful flour. Remove excess flour. Heat peanut oil in a deep fryer. Drop the onion slices into the oil, stir frequently with a fork and fry until they are light brown. Drain on paper towels, sprinkle with salt.

    Preparation othe tuna belly: season the 800 grams tuna steak with the Fleur de sel de Guérande and the black pepper. In a skillet heat 1 TBS olive oil, sear the tuna steak for 2 minutes on each side (the steak should remain pink on the inside), set aside on a serving plate.

    Reheat the sauce. Mix in 1TBS small capers, 1TBS chopped green olives, 1 TBS chopped black olives, 1 teaspoon green pepper and finely the thyme. Place the tuna steak 2 minutes in a preheated oven. Slice the steak in 12 thin slices.

    Place 3 slices on each plate, top them with the aromatic sauce as well as the fried onion rings.
