  • 4 trout
  • a slice of onion
  • 1 carrot sliced
  • salt and pepper
  • a handful of tarragon
  • 40 g butter
  • 25 g plain flour
  • 150 ml white wine
  • 150 ml water
  • 150 ml double cream
  • Recipe preparation steps

    Clean the trout and remove the eyes and fins, season inside and out.

    Then place in a heat proof dish.
  • 3
    Add the wine and the water to cover the fish.
  • 4
    Add the onion, carrot and a sprig of tarragon.
  • 5
    Cover with a lid and poach in a moderately hot oven, 190°C gas 5, for 20 mins or until cooked.

    Remove the trout, drain and place on a serving dish and keep warm.

    Strain the liquid which the trout was cooked in into a saucepan and boil to reduce by half.

    Blend the butter and flour and whisk into the boiling liquid.

    Add the cream and boil gently for 4 to 5 mins Addtwo-thirds tablespoons of chopped tarragon.

    Season and pour over the trout garnish with whole tarragon leaves.
