  • 1 tablespoon olive oil
  • 1 tablespoon minced chives
  • juice from 1/2 lime
  • fine salt
  • zest from 1/2 lime, cut into fine filaments
  • olive oil
  • coarsely ground mixed pepper [optional]
  • 200 g haddock (or smoked tilapia), soaked for 6 hours in cold water, dried well
  • 150 g raw sauerkraut

    Slice the fish into paper-thin slices and arrange in a circular pattern on chilled serving plates.

    Rinse the sauerkraut under cold, running water. Squeeze out all the water and place the sauerkraut in a bowl. Separate the sauerkraut with a fork. Add the olive oil, chives, and lime juice. Mix well. If the sauerkraut is not salty, add a little salt. Mound the sauerkraut in the center of the serving plates, inside the circle of fish slices.

    Strew the lime zest over the sauerkraut and drizzle a little oil over the fish. Sprinkle the fish with ground pepper, if desired.
