  • 1 head garlic
  • salt and freshly ground black pepper
  • 1 tablespoon minced chives
  • 1.1 kg rabbit, cut into 6 to 8 pieces with organs attached
  • 250 ml white wine
  • 130 ml madeira
  • Recipe preparation steps

    In a shallow pan large enough to hold the rabbit in a single layer, heat oil over high heat. Brown rabbit pieces on all sides. Add garlic and mix. Add wine and madeira, bring to a boil, lower heat and simmer for about an hour.

    About half way through the cooking, season with salt and pepper.

    When done, remove rabbit, set aside and keep warm. Reduce the sauce slightly to thicken.

    Arrange rabbit on serving plates, cover with sauce and sprinkle with chopped sides.
