  • fine salt and freshly ground black pepper
  • 1 tablespoon capers
  • 1 tablespoon flat-leaf parsley
  • 1 small salad tomato
  • ½ small red onion
  • 4 red mullet (or 2 tilapia) fillets
  • ½ tablespoons balsamic vinegar
  • ½ tablespoons sherry vinegar
  • 1½ extra virgin olive oil
  • 60 g mâche salad (lamb's lettuce)

    Combine the vinegars, salt, and pepper in a bowl. Whisk in the oil. Fold in the tomato, onion, capers, and parsley. Set aside.

    Salt the fish fillets and steam until barely cooked, about 4 minutes.

    While the fish is cooking, drain some of the liquid from the sauce into the mâche and toss to mix. Divide the mâche between individual serving plates. 4. When the fish is done, drain the fillets and arrange them on top of the mâche. Spoon the sauce over the fish.
