Recipe's Ingredients

  • 4 fillet steaks
  • 2 tablespoons black pepper
  • 4 tablespoons brandy
  • 3 tablespoons single cream
  • oil
  • salt
  • watercress
  • 60 g of butter
  • Recipe preparation steps

    Brush the steaks with oil. Coat with the black peppers and crush them into the steak with a hammer.

    In a large frying pan melt the butter and cook the steaks. For about 1 mins 30 secs on each side. Turn the heat down and cook for another minute for rare. Or 3 mins for medium 7 mins for well done. Season with salt as required.

    Warm the brandy and set alight and pour over the steaks. Then place on a warm serving plate and keep hot.

    Pour the cream into the juices in the frying pan. Heat gently for a few mins. Pour over the steaks and garnish with watercress.
