  • 1 teaspoon baking soda
  • ½ tablespoons ground anise seeds
  • ½ tablespoons ground allspice
  • ½ tablespoons ground cinnamon
  • ½ tablespoons ground nutmeg
  • ½ tablespoons ground ginger
  • 1 xtra-large egg
  • 1 xtra-large egg yolk
  • 80 g light brown sugar
  • 250 g all-purpose flour, divided into 2 portions
  • 180 ml water
  • 200 ml honey
  • Recipe preparation steps

    Preheat oven to 160°C. Butter two 7-cm wide by 14-cm long by 5-1/2-cm deep loaf pans, and set aside.

    In an overly large saucepan, bring the honey, sugar, water to a boil. Carefully add the baking powder and baking soda, followed by the spices. Pour the mixture into the bowl of an electric mixer fitted with a paddle. Using the mixer at medium speed, slowly add the first portion of flour and incorporate completely. Add the egg and egg yolk and mix in completely. Finally, incorporate the last portion of flour.

    Divide the batter between the two loaf pans. Bang the pans on the counter to settle the batter into the corners of the pans. Bake the bread for about 55 minutes in the center of the oven.

    Remove the finished bread from the oven and unmold onto cooling racks. Cool completely before slicing.
