  • 4 shallots chopped
  • salt and pepper
  • 2 tablespoons chopped parsley + for garnish
  • 24 tablespoons dry white wine
  • 2 tablespoons lemon juice
  • halved mushrooms
  • lemon twists
  • 80 g butter
  • 100 g mushrooms slices
  • 900 g sole fillets cut in half lengthways and skinned
  • 25 g flour
  • 150 ml chicken stock
  • Recipe preparation steps

    Melt 50g of butter in a pan. Cook the shallots and mushrooms until soft. Add the parsley and place in the bottom of an oven proof dish.

    Roll the fillets head to tail and place in the dish, season well.

    Pour the wine, stock and lemonlemon juice over the top.

    Cook in a preheated oven 350°F - gas 4 - for 15 mins.

    Knead the butter with the flour.

    Transfer the sole to a serving dish to keep warm.

    Add the butter

    flour in small pieces to the cooking liquid, stirring until dissolved. Heat until the sauce thickens pour over the fish.

    Serve hot garnished with parsley, halved mushrooms and lemon twists.

THE best gourmet fish dish ever! Double the sauce if you wish.
