  • 1 tablespoon butter
  • 1 small shallot
  • salt and freshly ground black pepper
  • 1 teaspoon minced chives
  • 100 g fresh morel mushrooms, or 25 dried morel mushrooms hydrated, feet removed
  • 300 g sole (or tilapia) fillets
  • 50 ml fumet de poisson (fish stock)
  • 50 ml dry white wine
  • Recipe preparation steps

    Melt the butter in a small frying pan over medium heat. Add the shallot and sweat briefly. Add the mushrooms and fry until cooked. Set aside.

    Place the fish in a single layer in a frying pan along with the fish stock and white wine. Cover and bring to a boil. Lower heat and simmer until fish is cooked, about 2 to 3 minutes. Turn fish part way through the cooking. When cooked, transfer the fish to a plate and set aside. Keep warm.

    Add the mushrooms to the stock, increase heat to high, and reduce by about three-fourths. Add the cream and reduce until thickened. Season with salt and pepper.

    Transfer the cooked fish to heated serving plates. Spoon the sauce and mushrooms over the fish. Sprinkle the fish with chives.
