  • 1 tablespoon butter
  • 1 clove garlic, finely minced
  • 1 tablespoon minced parsley
  • 24 burgundy snails, rinsed and drained
  • salt and freshly ground pepper, to taste
  • 150 g chanterelle mushrooms, thinly sliced
  • 80 ml heavy cream
  • 50 ml pilsner-style beer
  • Recipe preparation steps

    Melt butter in a frying pan over high heat. Add mushrooms and fry a bit. Add garlic, parsley, snails, salt, and pepper. Continue to fry until dry.

    Add cream and reduce. Add beer, mix well, and cook a short while longer.
