This recipe originated in bars and brasseries of Les Halles. It was a breakfast pick me up early risers to the central market or for nightowls a cure for the effects of alcohol.The nickname for this soup is drunkard's soup

Recipe's Ingredients

  • 1 tablespoon of flour
  • freshly ground black pepper
  • salt
  • 6 thin slices of french bread
  • 250 g mild onions
  • 70 g butter
  • 100 g grated gruyère cheese
  • Recipe preparation steps

    Peel and finely chop the onions. Heat 1.5 oz of the butter in a heavy saucepan, add the onions and fry slowly until soft and golden brown about 30 mins. Sprinkle with flour and pour 6 cups of water into pan. Stir and season with salt and pepper cover and simmer for a further 30 mins.

    Meanwhile lightly toast the bread and set aside. Pour the soup into 6 ovenproof bowls. Place the bread on top and sprinkle with cheese and flakes of remaining butter. When cheese is bubbling remove and serve.
