  • 1 egg yolk
  • pinch of salt
  • 1 tablespoon of cold water
  • 100 g butter
  • 250 g flour
  • Recipe preparation steps

    Soften the butter in a warm bowl and work into a cream.
  • 2
    Sieve the flour into a mound. Make a well in the centre and into it drop the yolk, salt and butter. Work them together with the fingers of one hand and when well mixed together gather in the flour. Add a tablespoon of very cold water, and a second one if necessary. Work until a soft supple ball is formed.

    Put in the fridge and chill for 30 mins. Roll out the pastry,fold into four and roll out again. Chill again for 30 mins before use.
