  • part of 1 small leek, long 0.04" wide shreds
  • part of 1 small carrot, long 0.04" wide shreds
  • zest from 1/3 orange, long 0.04" wide shreds
  • 1 pinch powdered ginger
  • 1 pinch powdered saffron
  • finely ground black pepper
  • 1 pinch granulated sugar
  • 150 g sea bream (or tilapia) fillet
  • 400 ml fish stock
  • Recipe preparation steps

    Preheat the serving bowls.

    Place the stock, leek, carrot, orange zest, ginger, saffron, black pepper, and sugar in a saucepan and bring to a full boil. Boil for 1 minute.

    Divide the stock and vegetables between the heated soup bowls. Rapidly add the fish to the soup, one piece at a time.

    Serve immediately.
