Recipe's Ingredients

  • 2 tablespoons of olive oil
  • 2 onions, finely chopped
  • 2 cloves of garlic, chopped
  • 2 carrots, finely chopped
  • 2 sticks of celery, finely chopped
  • 1 bay leaf
  • salt and pepper
  • 3 spicy sausage
  • chopped parsley
  • 200 g dried haricot beans
  • 100 g thick cut bacon, cubed
  • 1 l of chicken stock
  • Recipe preparation steps

    Soak beans overnight. The next day, drain, rinse well and place in pan. Cover with water and bring to the boil then simmer for 1 hr drain and set aside.

    Heat oil in frying pan and cook bacon for 5 mins, add onions, garlic, carrots and celery cook for 5 mins more. Pour the stock in and put the sausage in whole.

    Simmer for 25 mins with the lid on pan. Add the drained beans simmer for a further 10 mins. Remove the sausage and slice return to pan. Serve with a little chopped parsley sprinkled on top.
