Soak beans overnight. The next day, drain, rinse well and place in pan. Cover with water and bring to the boil then simmer for 1 hr drain and set aside.

Heat oil in frying pan and cookbacon for 5 mins, add onions, garlic, carrots and celerycook for 5 mins more. Pour the stock in and put the sausage in whole.

Simmer for 25 mins with the lid on pan. Add the drained beans simmer for a further 10 mins. Remove the sausage and slice return to pan. Serve with a little chopped parsley sprinkled on top.
