Recipe's Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 tablespoon truffle juice(optional)

  • 100 g large brown mushrooms
  • 450 g fresh salmon filets
  • 170 ml fish stock, or chicken stock
  • 160 ml heavy cream
  • Recipe preparation steps

    Heat oil over medium heat in a small sauté pan. Sauté mushrooms until cooked. If they become too dry, add a small amount of water. When done, drain if necessary and set aside.

    Reduce the fish stock over high heat. When reduced by half, set aside. Melt butter in a small sauce pan over medium heat and add flour. When flour is cooked, whisk in reduced stock, cream, and truffle juice. When mixed and thickened, add reserved mushrooms. Salt to taste. Set aside until salmon is ready.

    Salt salmon. Heat olive oil in a sauté pan over medium high heat. Cook salmon until almost done. Set aside, tented with foil, for 5 minutes. Plate and top with sauce.
