  • freshly ground black pepper
  • ½ teaspoons minced lemon zest
  • 1 teaspoon minced fresh tarragon
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons lime juice
  • 250 g fresh salmon, cut in a fine dice
  • 50 g heavy cream
  • 10 g capers in brine
  • Recipe preparation steps

    Salt and pepper the salmon. Prepare a vinaigrette from the lemon juice and oil. Add to the salmon and mix well. Add half the lemon zest and mix. Set aside.

    Combine the cream, capers, lime juice, the other half of the lemon zest, and the tarragon. Season with some salt and pepper. Set aside.

    Mound the salmon in the center of serving plates. Spoon the sauce around the salmon.
