  • 4 eggs
  • 2 egg yolks
  • grated nutmeg
  • salt and pepper
  • 150 g smoked salmon
  • 50 g butter
  • 400 g pastry dough
  • 250 ml creme fraiche

    Preheat oven to 400°F - gas mark 6, grease a 10" flan tin.

    Roll out the pastry to a thickness of about 1/8". Line the flan tin and bake blind for about 10 mins.

    Meanwhile prepare the filling: beat the whole eggs and the egg yolks with the creme fraiche. Season with salt and pepper and the nutmeg. Beat once more, then pour into the pastry case.

    Increase the oven to 425°F - gas mark 7.

    Cut the salmon into thin strips and arrange on top of the egg mixture. Dot with flakes of butter. Bake the quiche in the centre of the oven for about 25 mins, or until the filling is golden brown. After the first 10 mins cover the top to prevent the salmon from drying out. Serve warm.
