Scrape the scales from the skin of the salmon wash well and dry with a paper towel. Brush 4 squares of foil lightly with oil. Place a piece of salmon on each. Sprinkle with lemon juice, herbs and salt and pepper. Add a knob of butter.
Draw up the foil and pinch the edges together to seal well. Transfer to a baking sheet preheat the oven 200°C gas 6.
Place in the oven and cook for 20 to 25 mins.
Serve with new potatoes and salad and maybe garlic mayonnaise
