  • 2 cloves garlic, minced
  • 1 bunch fresh spinach
  • 1 tablespoon soft butter
  • 1 gg, beaten
  • 1 teaspoon cornstarch
  • 1 tablespoon lemon juice
  • salt and freshly ground pepper
  • 1 gg yolk beaten with a little of water
  • 450 g puff pastry
  • 60 g finely grated gruyére cheese
  • 250 g boneless, skinless salmon cut into 1/2" cubes
  • 130 ml heavy cream

    Preheat oven to 400ºF.

    Combine garlic and spinach. Wilt spinach in a small amount of water. Do not overcook. Drain very well and combine with butter. Set aside.

    Combine the egg, cream, cornstarch, lemon juice, salt, and pepper. Set aside.

    Roll out half the puff pastry to make 4 squares large enough for the bottoms and sides of the individual tart pans. Line each pan. Divide the cheese equally among the tart pans. Divide the spinach among the pans. Space the spinach evenly in 4 piles in each pan. Divide the salmon evenly among the pans, and arrange in an even single layer. Divide the egg and cream mixture equally between the pans.

    Brush the exposed edges of the puff pastry with the egg wash. Roll out the remainder of the puff pastry and divide into 4 squares large enough to cover the tart pans. Carefully lay a piece of puff pastry on each pan. Using a rolling pin, press the pastry down on the pan edges to cut the pastry flush. Lightly brush the pastry tops with the egg wash.

    Using scissors, cut a "+" in the top layer of pastry almost to the edges of the pans. Fold each "petal" outward and lightly brush the exposed surfaces with the egg wash.

    Place the tart pans on a baking sheets and bake for 10 minutes. Reduce the oven temperature to 350ºF and continue baking for an additional 10 minutes.

    When cooked, remove from oven and let rest for about 10 minutes. Remove the tarts from the pans and serve with a green garnish.
