  • 4 tablespoons butter
  • ½ teaspoons of salt
  • 700 g or 960 whole roasting chicken

    Preheat oven to 205°C.

    Put inside the chicken 1 tablespoon of butter and a pinch of salt. Rub the skin with 1 tablespoon of butter.

    Place the chicken and a peeled onion in a roasting pan. Cook in the oven for 15 minutes. Pour over the chicken 2 tablespoons of melted butter and one tablespoon of cooking oil.

    Reduce heat to 177°C. Cook for 30 minutes for a 4 lb chicken, 20 minutes for a 3 lb chicken. Pour the fat in the pan over the chicken every 10 minutes. Add a pinch of salt. Turn the pan. Cook for another 30 minutes for a 4 lb chicken, 20 minutes for a 3 lb chicken.
