Recipe's Ingredients

  • 2 tablespoons olive oil
  • 6 eggs size 2
  • pinch of paprika
  • 4 tablespoons of cooking oil
  • 350 g eggplant
  • 200 g onions, peeled and chopped
  • 50 g butter
  • 200 g rice
  • 250 g frozen peas
  • 200 g boiled ham cut thick
  • 600 ml warm water
  • Recipe preparation steps

    Cut the eggplant into thick slices sprinkle with salt and press between two plates.

    Melt the butter in a large frying pan over a low heat, add the onions and cook until tender.

    Add the rice and season well stirring all the time. Cook for 2 to 3 mins.

    Add the warm water stir well cover and leave over a medium heat for 15 mins until the liquid is absorbed.

    Meanwhile drain, wash and dry the eggplant cut into cubes and cook in hot oil for 10 mins.

    Blanch the peas in salted water for 5 mins.

    Cut the ham into cubes add it to the eggplant to colour. Then mix them and the peas into the rice, check the seasoning. Put on a warm dish. Pour cooking oil into a frying pan and when hot fry the eggs and place on top of the rice. Serve immediately with homemade tomato sauce.
