  • 2 (about 160g each)steaks (rib-eye).fine salt and freshly ground black pepper
  • 1 large shallot, peeled, finely shredded
  • 1 small red bell pepper, cored, seeded, shredded
  • 1 small zucchini, 2-mm shreds
  • 1 green onion, 8-cm lengths, shredded
  • prepared wasabi
  • grapeseed oil
  • 1 tablespoon dry white wine
  • 1½ tablespoons soy sauce
  • olive oil
  • 60 g snow peas, strings removed, sliced lengthwise

    Season the steaks with salt and pepper. Cook the steaks by pan-frying in oil.

    Drain the fat from the frying pan and place the hot pan over high heat. Deglaze the pan with the wine and 1 tablespoon soy sauce. When the sauce is slightly reduced, set aside until the steaks are plated.

    In the meantime, heat a little olive oil in a wok or frying pan over medium heat. Add the shallots and red pepper. Stir-fry a bit until they start to soften. Add the snow peas and fry a bit more. When all the vegetables are about cooked, add the zucchini and green onions. When the zucchini starts to soften, season the mixture with 1 teaspoon soy sauce.

    Place the steaks on individual heated serving dishes and spoon the sauce over the tops. Place a mound of vegetables next to the steaks along with a dab of wasabi.
