This is a basic wine sauce typical to many traditional French preparations.

  • 2 tablespoons butter
  • 1 sprig thyme
  • 1 bay leaf
  • 120 g veal demi-glace
  • 30 g finely minced carrots
  • 30 g finely minced leeks
  • 500 ml red wine
  • Recipe preparation steps

    Melt 1 tablespoon butter in a sauce pan. Sweat carrots and leeks. Add thyme, bay, wine, and demi-glace. Reduce substantially. Strain.
