  • ½ tablespoons all-purpose flour
  • 2 tablespoons heavy cream
  • 2 tablespoons milk
  • fine salt and freshly ground black pepper
  • freshly ground nutmeg
  • 450 g common mushrooms, peeled or washed

    Prepare the Béchamel sauce: melt the butter in a small saucepan over medium heat. Stir in the flour and cook for a few minutes without allowing it to color. Whisk in the cream and milk. Continue whisking until the sauce thickens. Set aside until needed.

    Finely chop the mushrooms with a food processor. Immediately place the chopped mushrooms in a frying pan set over high heat. Stir until the water expelled by the mushrooms has evaporated completely.

    Mix in the sauce béchamel. Season with salt, pepper, and nutmeg.
