  • 1 tablespoon butter
  • ½ teaspoons butter
  • freshly ground black pepper
  • 1 very small fresh bay leaf
  • 1 sprig fresh thyme
  • 500 g carrots, cut into thin rounds
  • 100 g onion, thinly sliced
  • 45 ml chicken stock
  • Recipe preparation steps

    Preheat the oven to 375ºF.

    Place all the ingredients into a small, heavyweight saucepan. Cover pan and bake the combination until the carrots are falling apart, about 75 minutes. Stir occasionally.

    Remove the saucepan from the oven. Discard the bay leaf and thyme sprig. Purée the contents of the saucepan in a food processor. Pass through a strainer and taste for salt before serving.
