500 g broccoli, cut into separate florets and bite-sized pieces of stalk
fine salt and freshly ground pepper
30 ml heavy cream

Bring a large saucepan of salted water to a boil. Cook the broccoli stalks for about 5 minutes. Add the florets and continue cooking for another 5 minutes. Drain well.

Purée the cooked broccoli and cream in a food processor until smooth. Season with salt and pepper. Strain through a sieve.

Keep warm in a "bain-marie" (double boiler) for at least 10 minutes before serving.
