  • 1 tablespoon olive oil
  • 2 tablespoons sugar
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon butter
  • ½ small green apple, peeled, cored, cut into 1/4" cubes
  • 1 tablespoon finely minced fresh thyme
  • 3 pitted dried prunes, thinly sliced
  • 6 shallots, trimmed, peeled and cut in half crosswise
  • 250 ml beef stock

    Heat oil in a heavy pot over low heat. Sauté the shallots for about 15 minutes until soft and separated.

    Add sugar and mix thoroughly. Add vinegar and reduce over high heat until thickened.

    Add broth and continue reducing for about 10 minutes more until a sauce-like consistency is achieved.

    Melt butter in a small sauté pan over medium heat. Add apple and sauté for 3 to 5 minutes until the apple softens and is caramelized a bit.

    Add thyme, prunes, and cooked apple to onion mixture and mix. Cover and keep warm until serving.
