  • 3 leeks
  • salt and pepper
  • 3 slices of bread
  • 350 g floury potatoes
  • 30 g butter
  • 750 ml of chicken stock
  • 100 ml of cream
  • Recipe preparation steps

    Peal and chop the potatoes into small chunks.
  • 2
    Trim the leeks white part only and cut into small slices.
  • 3
    Place the poatoes and leeks in a pan with the chicken stock. Season well with salt and pepper bring to the boil. Then cover and simmer for 20 mins.

    When the potatoes and leeks are soft puree the soup in a blender or rub through a sieve. Return to the pan and stir in the cream. Heat but do not allow to boil.

    In the frying pan melt the butter and slice the bread into small squares remove the crusts and fry in hot butter. When brown sprinkle over the soup and serve.
