  • 3 eggs, size 2, separated
  • salt and pepper
  • grated nutmeg
  • 7 ins soufflé dish
  • 250 g mashed potatoes
  • 25 g butter, softened
  • 50 g lean boiled ham, finely chopped
  • 25 g grated gruyère cheese

    Beat the egg whites until stiff peaks are formed.

    Heat the oven to 350ºF.

    Press the potatoes through a sieve to ensure their smoothness. Beat in the softened butter, egg yolks, ham and grated cheese. Season and add a pinch of nutmeg to taste. Beat the mixture thoroughly then fold in the stiffly beaten egg whites.

    Pour into a thickly buttered soufflé dish.

    Bake for 30 mins and serve straight away.
