Peel and grate the potatoes and rinse under cold water. Drain and place in a bowl, add the eggs and mix.Then add the onions, flour, herbs and garlic. Season with salt and pepper and a little grated nutmeg, mix thoroughly.
Divide the mixture into equal size portions and shape into small flat rounds. Heat the oil in the frying pan add the potato pancakes and fry until golden brown on each side. Serve hot with a meat dish or charcuterie and salad.
