  • 2 eggs
  • 2 tablespoons freshly chopped chives or parsley
  • salt and pepper
  • vegetable oil for shallow frying
  • 1 kg potatoes peeled
  • 100 g cream cheese
  • Recipe preparation steps

    Grate the potatoes and squeeze them in your hands to extract as much moisture as possible. Then pat dry with paper towels.

    Put the cream cheese in a bowl. Beat until soft. Beat in the eggs then add the potatoes, chives or parsley, add salt and pepper to taste.

    Pour enough oil in a frying pan to come about 1 inch up the sides of the pan. Place over a moderate heat until the oil is hot. Place the potato mixture into the hot oil. One tablespoon at a time spacing them well apart. Fry for about 5 mins each side and then drain on kitchen paper and serve hot.
