  • 500 g potatoes, quartered length wise and finely sliced
  • 500 g leeks, cleaned and finely sliced
  • 30 g unsalted butter
  • 2 l of boiling water

    Put the potatoes and leeks in a pan of boiling water.

    Cook until the potatoes are starting to break up.

    This should take about 15 to 20 mins, then add the butter and you are ready to serve.
