  • 1 small clovegarlic, peeled, germ removed, pureed
  • fine salt
  • freshly ground black pepper
  • 30 g finely chopped onion
  • 120 g peeled, cored, seeded, diced tomatoes

    Heat the olive oil in a small saucepan over medium heat.

    Add the onion and cook until soft but not colored.

    Add the tomatoes and garlic.

    Season with salt and pepper.

    Once the tomatoes start to shed some water, lower heat and cook the mixture, stirring frequently, until soft and dry.
