Recipe's Ingredients

  • 2 teaspoons of oil
  • 4 pork chops
  • 2 sticks of celery cut into 1 inch lengths
  • 2 dessert apples cored & sliced
  • 4 tablespoons still cider { hard }
  • 1 tablespoon dried thyme
  • salt and pepper
  • chopped parsley for the garnish
  • 30 g of butter
  • 130 g button onions peeled
  • 250 g tomatoes skinned and quartered
  • 120 g button mushrooms washed
  • 20 g plain flour
  • 450 ml chicken stock
  • Recipe preparation steps

    Heat the oil and butter together in a heat proof casserole dish. Add the onions and fry gently until brown. Add the pork chops next and fry until browned on both sides.

    Mix the rest of the vegetables and the apple slices. Add to the casserole and cook stirring for 3 mins. Stir in the flour and cook for 2 to 3 mins. Pour in the cider and stock next. Add the thyme and season to taste.

    Cover the casserole and cook in a moderate oven. 177°C or gas 4 for 45 mins. garnish with parsley and serve.
