Recipe's Ingredients

  • 2 eggs
  • 1 (8,5 ins) loose based flan tin
  • 250 g chestnuts
  • 250 g cox apples
  • 200 g lean pork finely minced
  • 15 g butter
  • 250 g short crust pastry
  • 100 ml madeira
  • Recipe preparation steps

    Heat the oven to 375ºF - gas 5. Butter the flan tin.
  • 2
    Cook and shell the chestnuts and break into pieces.
  • 3
    Peel and core, then finely chop the apples. Mix in with the chestnuts, pork and Madeira, salt and pepper and one egg.

    Roll out the pastry about a quarter inch thick and line the flan tin.
  • 5
    Prick the base with a fork then spread the filling over the base. Cover with the remaining pastry seal the edges brush with beaten egg. Cut a small hole in in the middle to allow the steam to escape.

    Bake for 45 mins and then cool for 10 mins. Serve warm
