  • 2 large or 3 small firm pears
  • 12 whole blueberries, for garnish
  • 1 teaspoon lemon juice
  • 150 g sugar
  • 10 g butter
  • 150 g blueberries
  • 20 g sugar
  • 80 ml light red wine, such as a côtes du rhone

    Place wine in a non-reactive sauce pan and bring to a boil. Burn off alcohol. Add blueberries, sugar, and lemon juice. Return to a boil. Reduce heat and simmer for 30 minutes. Process through a food mill and set aside.

    Place 125 grams of sugar with sufficient water to cover pears in a small sauce pan and bring to a boil. Add pears and simmer for 30 minutes. Remove and drain the pears. Discard poaching liquid.

    Carefully slice pears in half lengthwise. Remove the core with a melon-baller.

    Melt 20 grams of sugar and the butter in a nonstick frying pan over medium heat. Add the pears, dome side down. When browned, flip pears onto the flat side.

    Meanwhile, reheat the coulis over low heat.

    Spread the blueberry coulis on warmed, individual serving plates. Slice pears into thin slices leaving the slice attached at the stem end. Arrange the pears, flat side down, fanned out on the coulis. Garnish with whole blueberries and serve immediately.
