  • ½ small onion, finely diced

  • 45 g butter
  • 250 ml chicken stock
  • 60 ml white wine vinegar

    Prepare a "sauce velouté": Melt 15 grams of butter in a small saucepan over medium heat. Stir in the flour and cook for a couple of minutes. Do not allow the flour to brown. Gradually mix in 125 milliliters of chicken stock and bring to a low boil. When the sauce has thickened set aside.

    Melt 15 grams of butter in a small saucepan over medium heat. Add the onion, sprinkle with a pinch of salt, and cook to soften without coloring. Add the vinegar and the remaining 100 milliliters of stock, bring to a boil, and reduce until almost dry.

    Stir in the sauce velouté and the paprika. Simmer for a good 10 minutes. Season with salt. If the paprika is not too spicy, add some black pepper.

    Just before serving, strain the sauce and, off the heat, stir in the last 15 grams of butter.
