saffron threads, soaked in 3 teaspoons white wine

small shallot, minced
1
small clove of garlic, minced (optional)
1
sprig of rosemary
1
sprig of thyme
salt and pepper

tablespoon chopped chives
4
teaspoons cream
4
tablespoons grated parmesan
12
slices of chorizo
2
tablespoons toasted pine nuts
4
tablespoons olive oil
120 g
arborio rice
300 ml
chicken stock
Recipe preparation steps

Preheat the
olive
oil in a large saucepan.

Add the
shallot
and garlic; stir for one
minute
.

Add the Arborio rice,
rosemary
and
thyme
.

Pour in half of the
chicken
stock and stir constantly over medium heat until the liquid has been absorbed.

Add the rest of the
chicken
stock and cook until the rice is al dente.

Stir in the soaked
saffron
and let dissolve for 1 minute.

Stir in the
cream
, followed by the
chives
and
parmesan
.

Season with
salt
and freshly ground white
pepper
to taste.

Chorizo : Pan fry the chorizo slices briefly on both sides in
olive oil
.
