  • 2 slices lean bacon
  • 3 eggs
  • salt and pepper
  • 1 (8,5 in) loose based flan tin
  • 180 g short pastry
  • 40 g butter
  • 350 g chopped spring onions
  • 250 ml single cream

    Heat oven to 400ºF - gas mark 6, with baking sheet inside. Line flan tin with short pastry and chill until required. Melt butter until foaming and cook onions until soft.

    Cut the bacon into small pieces.

    Beat eggs and cream and seasoning together.
  • 4
    Season the onions and arrange in pastry case. Pour in the eggs, scatter with the bacon pieces and place on hot baking sheet and then bake for 30 mins or until set

    Serve warm.
