  • 3 egg yolks
  • 1 tablespoon lemon juice or vinegar
  • ¼ teaspoons dry mustard
  • salt and pepper
  • 400 ml olive oil

    Beat egg yolks in a bowl for 2 minutes.

    Add lemon juice or vinegar, mustard and salt. Beat for 30 seconds.

    Add olive oil very slowly with a teaspoon Keep on beating the mixture. Every 10 seconds, stop pouring the oil but continue to beat. Beat until the sauce has thickened. Keep the remaining olive oil aside.
