  • 2 egg yolks
  • 25 g sugar
  • 50 g fruity olive oil
  • 170 ml milk

    Combine sugar and egg yolks in a small bowl. Whisk together until thoroughly mixed and the yolks lighten in color. Set aside.

    Put milk and cream into a small saucepan. Carefully heat the milk mixture, stirring often, until it starts to boil.

    Slowly whisk the hot milk mixture into the egg mixture. When combined and smooth, return the mixture to the saucepan. Stirring continuously, heat the mixture over medium heat until it begins to thicken and easily coats the back of a wooden spoon. Add the oil and mix.

    Strain the mixture into a bowl set in an ice bath. Stir mixture until it is chilled.

    Freeze mixture in an ice cream machine. Harden in a freezer.

    Move the ice cream to a refrigerator for about an hour before serving.
