  • 1 or 2 carrots, cut into juienne strips
  • 2 turnips, cut into juienne strips
  • 2 potatoes, cut into juienne strips
  • 2 leaks trimmed, cut into juienne strips
  • 3 or 4 cabbage leaves, cut into juienne strips
  • croutons
  • 130 g mushrooms, cut into juienne strips
  • 60 g butter
  • 1 l of consomme
  • Recipe preparation steps

    Melt the butter in a saucepan over a medium heat add all the vegetables. Except the mushrooms, and cook until soft.

    Add the consomme, cover the pan and simmer for about 30 mins Or until cooked then add the mushrooms cook for a further 10 mins.
  • 3
    Serve with croutons.
