  • 3 tablespoons water
  • ½ tablespoons butter
  • ½ clove garlic
  • 1 shallot
  • salt and pepper
  • olive oil
  • ½ teaspoons parsley
  • 1 teaspoon sugar
  • 140 g flour
  • 70 g butter
  • 20 g egg yolk
  • 50 g chanterelles
  • 50 g porcini mushrooms
  • 50 ml water
  • 100 ml milk
  • Recipe preparation steps

    Making the dough (or use pre-made dough)

    Mix the flour, 67.5 g butter, egg yolk, 1 teaspoon salt, 1 teaspoon sugar and water together until smooth. Wrap the dough in plastic wrap and let it rest for four hours in the refrigerator.

    Roll it out thinly with a rolling pin or using the thinnest setting of a pasta machine and cut into 3" diameter circles. Place the circles in small tart forms, place a new tart form over it and fill with beans. Bake at 340ºF for 10 minutes. (Pre-baked tart shells may also be used.)

    Making the filling

    Chop the mushrooms, shallots and parsley.

    Sauté the mushrooms in a little oil; add the butter, shallot and parsley and cook 1 minutes longer. Season with salt and pepper and place in the tart shells.

    Heat the milk, season with salt and pepper, foam with a hand mixer and pour over the tarts.
  • Ready !
