This sauce is great on simple omelets, but it’s also suitable for chicken or turkey. Just before serving, if the sauce needs to be thickened, add about 1/2 teaspoon of arrowroot starch mixed with 1/2 tablespoon water to the sauce. Heat the sauce, stirring constantly until almost boiling to activate the starch

  • 2 tablespoons butter
  • 1 small shallot, minced
  • ½ tablespoons mixed, fresh herbs
  • 80 g peeled, thinly sliced mushrooms
  • 50 ml dry white wine
  • 20 ml cognac
  • 200 ml veal stock
  • Recipe preparation steps

    Melt 1 tablespoon butter in a small saucepan over medium-low heat. Sweat the shallots and mushrooms until the mushrooms expel their water and the water evaporates.

    Add the wine and reduce by half or so. Add the cognac and flambé. Add the veal stock and reduce by one-third.

    Just before serving, whisk in the remaining tablespoon of butter. Add herbs, stir, and serve.
