    On each of 6 serving plates, arrange 2 pear wedges with the narrow edges towards each other. Using 2 dessert spoons, make a small quenelle of mousse and place it between the pears. Carefully place a single tuile on top of the stack — gently pushing it down into place.

    Repeat the previous step 2 more times.3.Decorate the plates with a little crème anglaise and some chopped pistachios.
