  • 400 g small to medium eggplant
  • 100 g gouda cheese with cumin seeds

    Preheat broiler.

    Cut a series of 1/5" thick slices of eggplant sufficient to line two 175-ml ramekins. Place the slices on a baking sheet and lightly brush with olive oil on both sides. Cook the slices under the broiler until they start to brown, about 3 to 4 minutes.

    Dice the remaining eggplant into 5/16" cubes. Heat a little olive oil in a frying pan over high heat. Add the eggplant cubes, season with salt and pepper, and fry until they start to soften.

    Preheat oven to 355ºF.

    When the slices are cooked, line the ramekins. Place a one-eighth inch thick slice of cheese in the bottom of each ramekin. Add a spoonful of cooked eggplants cubes. Gently push the cubes down in the ramekin to remove any air spaces. Repeat with more cheese and eggplant cubes until the ramekins are full.

    Place the ramekins on a baking sheet and cook until heated through, about 10 to 15 minutes.

    Unmold the ramekins directly onto individual heat serving plates.
